Hot Soups to Beat the Winter Chill

chicken noodle soupNothing warms you up better on a cold winter day than a piping hot bowl of delicious soup. And nothing is better than homemade soup made with the freshest ingredients. Here are three great homemade soup recipes to help you fend off winter’s chill.

Homestyle Chicken Noodle Soup

Ingredients

  • 4 cups water
  • 1 14-1/2 oz. can chicken broth
  • 1 can (10-3/4 ounces) condensed cream of chicken soup
  • 2 cups cooked chicken breast, cubed
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 medium onion, chopped
  • 1 tsp. chicken bouillon powder
  • 2 tsp. dried parsley flakes
  • 1/4 teaspoon pepper
  • 3 cups egg noodles, uncooked

Directions

Combine all ingredients except the noodles in a Dutch oven. Bring the mixture to a boil, then reduce heat, cover and simmer 15 minutes. Stir in egg noodles and cook 6-8 minutes longer, until noodles and vegetables are tender. Yields 6 servings.

 

Hearty Potato Soup

Ingredients

  • 8 cups water
  • 1-1/2 cups whole milk
  • 6 medium potatoes, peeled and sliced
  • 6 celery stalks, chopped
  • 3 carrots, chopped
  • 1 medium onion, chopped
  • 6 tbsp. butter
  • 6 tbsp. flour
  • 1 tsp. salt
  • 1 tsp. pepper

Directions

Boil the potatoes, carrots and celery in water in a Dutch oven until tender, about 20 minutes. Reserving the liquid, drain the vegetables and set them aside. Saute the onion in butter until tender, stir in the flour, salt and pepper, then gradually add the milk. Boil and stir about 2 minutes until the mixture thickens. Stir in the cooked vegetables, then add 1-2 cups of the reserved liquid until the soup is at your desired consistency. Yields 8 servings.

 

Rich Tomato Basil Soup

Ingredients

  • 2 cans crushed tomatoes, 28 oz. each
  • 1 can chicken broth, 14-1/2 oz.
  • 1 cup heavy whipping cream
  • 1/2 tsp. sugar
  • 1/2 cup butter
  • 20 basil leaves, minced

Directions

Simmer the tomatoes and chicken broth in a large covered saucepan for 10 minutes. Add the basil and sugar. Reduce heat and gently stir in the cream and butter, cut into wedges. Cook until the butter melts. Yields 8 servings.
